Dorthy’s Candied Sweet Potatoes

Preparation time: 45 minutes Serves: 4

2 sweet potatoes, peeled and sliced 1” thick 
1/3 cup  brown sugar   
1/4 cup margarine 
1/4 cup water
   
Cook potatoes until barely fork-tender, then drain. Place potatoes in shallow 2 quart casserole. Preheat oven to 350. Heat brown sugar, margarine and 1/4 cup water over medium heat until margarine melts, and boil for a few minutes.  Drizzle mixture over potatoes. Bake uncovered 20 minutes or until potatoes are tender and lightly browned and sugar mixture thickens slightly.
