Fiddlehead Quiche

Preparation time: 55 minutes Serves: 6
1 Pie shell uncooked
2 tbsp. green onions, chopped
2 tsp. flour
2/3 cup milk
3 eggs
3 slices bacon, cooked crisp
1 cup cooked fiddleheads
Salt and pepper to taste
1 cup chopped fresh mushrooms
1 cup cheddar cheese grated
Paprika

Sprinkle pie shell with flour. Beat eggs, add milk, cheese, fiddleheads, mushrooms, green onions and seasonings. Pour into pie shell. Top with crumpled bacon. Bake in a 350 oven for 35-40 minutes or until top is golden brown.
