Fruit Bread

Fruit bread on a plate

1½ table. yeast
½ cups water

9-10 cups flour
1-cup brown sugar
3 tsp. salt
½ cup butter
3 cups warm water
3 eggs (beaten)

½ cup cherries (candied)
½ cup mixed candied fruit
1 ½ cups raisins

Mix the yeast and ½ cup of warm water in a bowl and set to proof for about 10 minutes. Mix flour, salt and brown sugar together. Cut in butter and mix to about pea size. Add the yeast mixture, water and eggs. Combine and knead for 10 minutes. Place in a greased bowl and let rise until double in size (1½ -2 hours) Punch down and place on flat surface. Cut into 2 large pieces then cut each piece into 3 smaller pieces. Form into 6 balls and place 2 balls into 3 loaf pans and let rise again for about 1 hour to 1½ . Bake in 350 oven for 1 hour.
