2 tbsp. vegetable oil
1 cup diced onions
1 cup diced fresh mushrooms
½ cup diced green pepper
¼ cup flour
2 cups milk
2 egg yolks, beaten
2 cups diced cooked turkey
¼ cup white wine (optional)
Salt and pepper to taste
In medium saucepan, heat oil and sauté onions, mushrooms and green pepper until tender. Stir in flour and continue to cook 1-2 minutes to cook flour. Add milk slowly and continue to stir until thickened. Stir in egg yolks; add turkey and wine, if using. Season to taste. Cook 5 minutes or until heated through. Serve over rice, pasta, toast or English muffins.
