Cooking Conversion Table<\/p>\n
Ingredients:
\n2 l\/2 cups flour, stirred
\n1 1\/2 cups cornmeal
\n2\/3 cup sugar
\n1 tablespoons + 1 teaspoon baking powder (4 teaspoons)
\n1 teaspoon salt
\n2 cups buttermilk
\n2 beaten eggs
\n5 tablespoons + 1 teaspoon melted butter<\/p>\n
Instructions:
\nPreheat oven to 400 degrees F
\nGrease baking pan or muffin pan (or use muffin paper liners)
\nIn a large bowl, combine flour, cornmeal, sugar, baking powder and salt and blend
\nIn a small bowl, combine buttermilk, eggs and butter; stir into dry ingredients
\nDo not over mix or texture will not be right
\nPour into greased pan or scoop into greased or paper lined muffin pan filling 2\/3 full
\nBake 16-18 minutes for muffins and about 25-30 minutes if using a 9 X 13 inch pan or
\nuntil toothpick inserted in the center comes out clean<\/p>\n
Check doneness at the earliest suggested time as ovens vary in temperature.
