Preparation time: about 25 minutes. 12 servings.
\nIngredients:
\n1 1\/2 pounds sausage
\n2 ounces fat from cooked sausage
\n1\/2 ounce onions, minced
\n1 1\/2 ounces flour
\n2 cups beef or pork stock
\n1 cup milk
\n1\/2 teaspoon salt
\n1\/2 teaspoon black pepper
\nInstructions:
\nCook sausage, drain and save the fat
\nAdd onions to fat and cook until transparent
\nAdd flour and cook 5 minutes but DO NOT brown the flour (you have just made a “roux” )
\nHeat stock and milk together in a separate pan
\nAdd your “roux” to the stock-milk mixture, stirring with a whip
\nCook until thick and smooth
\nAdd salt and pepper to taste and add back the cooked sausage and stir<\/p>\n
